FORMAL EASTER DINNER

Chef's Gift:
Egg baked in it's shell

Carrot & Ginger Soup

Spinach Salad
Prosciutto Dressing

Fish Course:
Scallop & Artichoke Flowers

Lemon Sorbet

Ham Royale
or
Ham with Port

Potatoes Chantilly
or
Mashed Potatoes
with truffle oil

Green Beans
in apricot sauce

Asparagus
with Hazelnuts

Sweet Potato Biscuits
or
Green Onion Biscuits

Dessert Raviolis
with
Deep Fried Strawberries

We are going to have all these courses, but you can leave out any that you like.  Do try the
eggs baked in the shells, they are very good.  Do serve small portions of soup and salad.
The lemon sorbet should be served in tiny dessert glasses that have been frozen, or just
in tiny spoons, this is just to clear the way for the main event.  You can make the lemon
sorbet, it's very easy or just buy some.   Wine suggestions are as follows:
Champagne or even Pink Champagne (not cold duck) to go through the fish course.
A nice Sauvignon Blanc or a Chardonnay with the main course.  For dessert serve coffee
and hot tea and offer a port or a brandy after if anyone has room.  You will need egg cups
to serve the eggs baked in it's shell.  You can get them at most import stores.

Some hints:  Start on Monday.  Make a list.  Have absolutely everything you
will need in your house by Thursday.  Think about hiring some help
(
maybe a teenager) to clean in advance or to help serve and clean up.  Make as
much in advance as possible.  Set your table the day before.  Have your outfit
and all your families outfits ready by Friday.  Relax and enjoy.
