Tomato Mac & Cheese
l, 7 oz. box small elbow macaroni
1, 12 oz. block sharp cheddar cheese, in 1/2 inch cubes
2, 14 1/2 oz. cans stewed tomatoes with juice
1 can chicken broth
salt & pepper to taste
Place macaroni, tomatoes & chicken broth in heavy saucepan. Cook on
heat, stirring often - reduce heat if necessary to keep from sticking -
macaroni is done. Add salt & pepper - stir well - check seasonings &
more if desired.
Then stir in cheese to mix well. Cover pot & let stand a few minutes.
is a great side dish for any meat dish or as a main dish with salad.
