SAUSAGE -POTATO-CHEESE BRUNCH
This is a delicious, hearty brunch that men especially enjoy and eat
2 cups thinly sliced, peeled potato
1 lb. Italian sausage, mild or hot
1/2 cup chopped green pepper
1/2 cup chopped onion
3/4 cup milk
3/4 teaspoon baking powder
1/4 cup grated Parmesan cheese
Salt and pepper
1/2 cup canned tomato sauce
4 ounces Mozzarella cheese, cut in 1" squares
In a shallow casserole, rub with oil. Arrange layer of the potatoes.
Cut sausage in small pieces and arrange on top of potatoes. Sprinkle
with green pepper and onions. Bake in a preheated 375 degree oven for
35 to 40 minutes.
In a bowl beat together eggs, milk, baking powder and Parmesan cheese.
Salt and pepper lightly. Pour over potato and sausage mixture; reduce
heat to 325. Bake another 30 minutes. and drizzle with tomato sauce
pieces of cheese; bake another 10 minutes. Serves six.
