FLUFFY EGGS IN A NEST
6 slices toast
1 cup grated Cheddar cheese
12 strips bacon, cooked crisp and crumbled
1/2 teaspoon salt
1/8 teaspoon pepper
Spread toast with butter and half of cheese. Separate eggs, place
whites in mixing bowl and leave each separate yolk in shell till
needed. Season whites with salt and pepper and beat until stiff and
fluffy. Gently fold in cool crumbled bacon. Place toast on a baking
tray and heap onto toast the egg white mixture; make a dent in center
each. Slip yolk into center of white and sprinkle each with remaining
cheese. Bake in a preheated 350 degree oven until cheese is browned and
eggs are set. Garnish with dash of paprika. Serves six.
