Fast, Easy Country Brunch Casserole
1/2 c onion, chopped
2 T water
3 c bread stuffing cubes
1/3 lb. Canadian Bacon, thinly sliced, cut into bite-size pieces*
1 c (4 oz) sharp reduced-fat Cheddar cheese, shredded
2 egg whites
1/2 tsp. dry mustard
1/2 tsp. onion salt
2 c skim milk
Microwave onion and water on HIGH for 2 minutes, stirring occasionally.
Place stuffing cubes in bottom of a 12x8x2-inch baking dish that has
been coated in cooking spray. Sprinkle with onion, ham and cheese. In a
separate bowl, mix eggs, milk and seasonings; pour over stuffing mixture. Cover
and refrigerate overnight. Bake, uncovered, at 325 degrees for 1 hour.
Let stand 10 minutes before serving.
*Canadian Bacon contains less than half the fat found in cured bacon.
