Farmers Egg Casserole

5-6 Eggs
2 TBS milk
1 med. baked potato sliced
1/4 cup favorite breakfast meat fully cooked(sausage, ham, bacon)
1/2 jalapeno pepper (deseeded for mild taste) chopped
4 slices American cheese.

Scramble eggs in a bowl together with milk. Pour into a large skillet
with a
bit of oil to prevent sticking. Immediately add potato, meat and
jalapeno.
Stir mixture over medium heat until almost thoroughly cooked. Add
cheese and
melt it into the mixture. Serves 4 people.
