Mexico's version of the Fourth of July is a good excuse to make some fabulous Mexican food.
So invite over some friends and make some  or have a cold glass of Sangria or Corona.
Here are a few ideas for a great meal to go with the beverages.

Cinco De Mayo Menu

For the Appetizer:

Queso Relleno  This one is a little bit of work, but worth it all.  Delicious and attractive, it makes
a nice centerpiece for your dinner.

Velveeta Ro-tel Dip   This one is a lot easier and is still a crowd pleaser.

For the Main Course:

Chicken Cocido This is a full meal all by itself and is one of my favorite Mexican dishes.
Just start it off with the Queso Relleno and you don't need anything else.

Chicken With Peanut Mole  A traditional Mexican dish with complex flavors.

Crab Tostadas Easy, cheesy, seafood entree that everybody loves.

Poblanos Stuffed with Shrimp  This one is a bit of work, but worth all of it.  The bell pepper
sauce that goes with it is a great touch.

Green Chili Casserole   This was the winner of our first recipe contest and is very simple and
everyone loves it.

Chicken Linguine Blanca  If you just can't stay away from pasta, this one with a spicy flair
would be appropriate for the occasion.

Summer Squash Enchiladas  Try this for a nice meatless entree or served together with
another entree.  Great for using up excess zucchini.

On the Side:

Spanish Rice   This moist flavorful rice beats boxed and that dry stuff they serve in restaurants
any day.

Dessert:

Coconut Custard  This tropical dessert provides a cool, soothing finish to the meal.
