Chunky Vegetable Chili
2 medium zucchini, cut into 1-1/2" pieces (1-1/2 cups)
2 green peppers chopped, (1 cup)
1 cup chopped onion
1 cup chopped celery
2-4 cloves garlic minced
3-4 teaspoons chili powder
2 tsp dried oregano, crushed
1 tsp ground cumin
4 14½-oz Mexican style crushed stewed tomatoes, undrained
2 17-oz whole kernel corn
2 15-oz can black beans, rinsed and drained
1 8-oz jar salsa
In a large (5qt) crock pot combine all ingredients. Cover and
cook on low for 8 - 10 hours or on high for 4-5 hours.
Top servings with sour cream if desired.
