Surprise Red Beans and Rice Salad

8 large leaves iceberg lettuce
3 c cooked brown rice
2 15 oz. cans red kidney beans
1 cup crumbled gorgonzola cheese
1/2 c dried cherries
1/4 c pine nuts
1 medium red onion, sliced thin
1/4 cup parsley
1 8 oz. bottle raspberry vinaigrette dressing

Recipe Directions:

Mix all the ingredients together and chill for 2 hours.
Toss with your favorite raspberry vinaigrette dressing and serve
inside of the large lettuce leaves. Makes 8 servings.

Mom-mom notes:  I really like using frozen, fully cooked brown rice for
this, that I purchase at Trader Joe's.  You can interchange any type of
blue cheese, or if you have picky kids, they like mozzarella instead. 
If I cannot easily find dried cherries, dried cranberries are a satisfactory
substitute.  If you don't think you would like brown rice, I encourage you
to try this, I also thought I would not like it and I was wrong.  The
whole family liked this dish.
