Sicilian Slathered Tomatoes

1 can (16 ounces ) white beans, rinsed and drained then mashed
1/3 cup mayonnaise
1 Tbsp lemon juice
1/2 tsp grated lemon peel
1 tsp capers
1 tsp dried currants
1 clove garlic, crushed
1 Tbsp snipped basil
1 Tbsp minced green onion
1 Tbsp grated parmesan cheese
1/2 tsp coarsely ground pepper
6 ripe tomatoes, sliced 1/4 inch thick (half red and half yellow if
possible)
spinach leaves
garnish- toasted pine nuts

Combine all the ingredients except the tomatoes and spinach leaves in a
bowl. Mix well. Arrange the tomato slices on a platter. Place a Tbsp of
the slather atop each tomato slice and spread slightly. Garnish and serve.
Serves 6-8
