 Red & Green Enchilada Casserole 
 
8 oz sour cream 
1 can diced green chilies 
1 can EACH Green Chili and Red Enchilada sauce 
2 lbs. hamburger 
1/2 cup water 
1 diced onion 
16 oz shredded Mexican cheese 
Jalapeņos to taste 
1 pkg. corn tortillas 
1 pkg. taco seasoning 
 
Mix sour cream and green chilies in a small bowl. 
 
Brown hamburger with onion and water. Add taco seasoning. 
 
Grease a 9x13 pan. Line the bottom with a double layer of tortillas. 
Then layer the hamburger, cheese, and sour cream/green chili mix. Pour 
most of the red sauce on one half and most of the green sauce on the 
other half, and end with a top layer of tortillas. Pour remaining 
sauce over. 
 
Bake at 350 degrees for 45-60 minutes.
