Pierogi Casserole

10 lasagna Noodles
1 egg
1/2 tsp. onion salt
1 c. shredded cheddar cheese
2 c. mashed potatoes
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. butter
1 c. chopped onions

Cook noodles as directed on package. Drain. Line bottom of 9 x 13"
pan with noodles. Mash potatoes with cheddar cheese, egg, onion salt,
salt and pepper. Spread over noodles.
Cover with another layer of noodles. Melt butter in pan, sauté onions
in butter until transparent and soft. Pour over noodles, cover and bake
for 30 minutes at 350F.
Let stand for 10 minutes before cutting. Serve with sour cream.
Serves 6-8.
