RED BEANS AND RICE WITH SMOKED SAUSAGE
2 Tbsp. vegetable oil
1 medium onion, chopped
4 oz chopped green chilies, drained
3/4 c raw rice
1 c water
1 beef bouillon cube
1 can (16 oz) kidney beans
1/2 c shredded jack cheese
1 lb smoked sausage
1 tsp hot sauce
In medium saucepan, heat oil over medium high heat; add onion and
chilies and sauté 3 minutes. Add rice, water and
bullion cube. Bring to a boil.
Reduce heat, simmer covered 15 minutes until rice is tender. Stir in
beans, cheese, smoked sausage and hot sauce.
