Peanut Butter Bacon Truffles

6 strips bacon, crisply cooked
1/2 cup dry roasted peanuts
4 tsp. sugar
1/4 cup smooth peanut butter
8 oz. semi-sweet chocolate chips
1/4 cup unsweetened cocoa powder

Put bacon, peanuts, and sugar into a food processor and pulse until mixture is medium fine texture.
Transfer mixture to a small bowl, add peanut butter and stir.  Cover and chill until firm.
Line a cookie sheet with parchment paper.  Roll peanut butter mixture into 1 inch balls and put on
the prepared cookie sheet.  Cover with plastic wrap and chill until firm.
Melt chocolate chips in a small bowl set over a small pot of simmering water, stirring often until
smooth.  Remove bowl from heat and set aside to cool until warm.  Sift cocoa into another bowl
and set aside. 
Roll peanut butter balls in melted chocolate and then cocoa powder. 
Serve at room temperature.
