What is easier than pasta? Over and over Americans vote Italian as their favorite cuisine,
after Big Macs, I suppose.  Pasta is an easy and inexpensive way to make
dinner from macaroni and cheese to the most complicated lasagna. It is a lot of fun to experiment with all the different types of pasta in the grocery store these days.

There are lots of recipes in all categories.

Asparagus Lasagna  This is a nice vegetarian entree, but warning: it's not a low cal or
low fat recipe.

Black Bean Lasagna  A nice meatless meal with low-fat dairy products and a nice cilantro

Buffalo Chicken Lasagna  A lasagna with a kick.  Bring it to a potluck or serve it at
a football party.  It is a hit every time.

Cajun Pasta Fresca  This is quick, easy and flavorful.  It's a nice and spicy and a great
last minute dinner.

Cannelloni  This recipe is a royal pain in the rear, even with a few shortcuts, but it is
really worth it, even the calories.  I make this once every several months and my husband
is always very impressed.  It makes a lot so I usually divide the recipe and freeze some
before it is baked.  Excellent for a make ahead meal for a dinner party.

Chicken Spinach Manicotti  It seems like a more difficult dish than it really is, so you
can soak up the compliments and know it was pretty easy.

Corn and Orzo Salad  If you are looking for a side dish that is a little different, this is
an excellent choice.  Orzo can be found at most supermarkets.

Crab Cannelloni  A reader requested a crab cannelloni recipe and I cobbled
one together out of several other cannelloni recipes that I have.  For that
special dinner.  This one is a pain, just like the regular cannelloni.

Creamy Chicken Lasagna This recipe is family and kid friendly.  It uses no bake
noodles for no fuss preparation.

Fettucini with Prosciutto and Peas  A classic dish is made easier for the home
cook with a few of the more difficult steps simplified.

Fettucini with Salmon Sauce  A creamy sauce that is a good way to use a little
salmon to feed a family.  A simple and elegant pasta that would be appropriate
for a nice dinner party as well.

Fiery Fettucini  A Cajun special with peppers and roasted peppers.

Fusilli German Style  Never heard of German pasta?  This is a good way to start.

Lemon Shrimp Angel Hair Pasta  A little cream and fresh angel hair makes this a
perfect light tasting dinner.

Manicotti with Crab Sauce  A very old recipe from my late Mother-In-Law.
Good for entertaining without being too fussy.  Easily frozen to cook

Mexican Lasagna  Can't decide on Mexican or Italian food.  Have a combo.
This freezes well also.

Orange Shrimp Alfredo An outstanding recipe from Sunkist.  It is perfect for a
dinner party.

Penne with Tuna  Pasta and tuna are naturals together and this quick dish will
be a family favorite.

Ricotta Gnocchi  These are a bit of a pain to make, but well worth it, my sons
love gnocchi, so they pitch in and help.  You can make any type of sauce rather
than the leek, pea and browned butter sauce in this recipe. 

Rigatoni with Bacon, Spinach and 2 cheeses  This won't be on the dieter's menu
but it will be on your table often if you try it once.

Shells with Lemon Cream  This is a very refreshing pasta that also has cabbage
and peas.

Stuffed Shells with Broccoli  This is a quick "baked" pasta, its only in the oven
for 25 minutes and kids eat this one up.

Teenager Party Spaghetti  Twelve servings of easy, delicious carbs that will feed
a baseball team.

Tortellini Carbonara  This carbonara also has mushrooms to make it more interesting.  Just tell the kids they are macaroni donuts.
