Huevos Sabado
1 tbsp. sour cream
2 tbsp. white wine
1 tsp. Tabasco Sauce
1/2 tsp. garlic salt
4 large eggs, room temperature
2 green onions, chopped
1/3 cup chopped fresh cilantro
2 tbsp. chopped red bell pepper
2 tbsp. chopped tomato
1/2 tbsp. olive oil
3 oz. Monterrey Jack Cheese, shredded
2 tbsp. sliced fresh mushrooms
1/3 cup sliced ripe olives
1/3 cup crushed corn chips, Fritos or substitute

Combine sour cream, wine, Tabasco sauce, and garlic salt in bowl, mash together to make paste.
In another bowl beat eggs and beat into sour cream mixture. Add onion, cilantro, bell pepper and tomato.
Heat olive oil in omelet pan till Hot, lower temperature and pour egg mixture into pan. Top with cheese, mushrooms, olives and chips. Cover pan and allow to cook slowly for about 30 minutes, and egg should have risen. Slice and serve. Makes 2 generous breakfast portions.
