Ginger Dressing

3 Tbsp. carrot, minced
3 Tbsp. fresh ginger root, minced
2 Tbsp. lemon pulp, chopped
1 medium onion, chopped
3/4 cup rice vinegar
3/4 cup water
1/2 cup soy sauce
3/4 cup vegetable oil
2 tbsp. ketchup
salt and pepper to taste

In a blender, combine all ingredients and blend at high speed
for 2 minutes.  Keep refrigerated and shake before using.
