Confetti Chicken & Rice

6-8 Chicken Thighs
3 Cup Chicken Broth
1 Med Onion Chopped
1 Tbsp. Kosher Salt
1 tsp. Coarse Ground Pepper
1 Cup Quick Cook Instant Rice
1 15 oz Can Mixed Vegetables, undrained
1 1/2 Cup Water
1/2 Cup Sweet Peppers (red, green, yellow), chopped

Instructions: Place chicken, broth, onion, salt and pepper into crock
pot. Bring to boil, reduce heat and simmer 45 minutes. Remove meat
from bones and return meat to pot. Add rice and mixed vegetables
with liquid and 1 1/2 C water. Simmer together for 1 hr.
Add sweet peppers and continue cooking an additional 30 minutes.
Serves 8
