Chocolate Cheese Fritters

15 oz. ricotta cheese
3 eggs
1/2 cup flour
2 tbsp. melted butter
2 tsp. grated orange peel
1/8 tsp. salt
1 1/2 oz. milk chocolate, finely chopped
Vegetable oil, for frying
3/4 cup honey, warmed

Mix ricotta and eggs with a fork.  Add flour and mix just until incorporated.  Add butter,
orange peel, salt and chocolate, stir until just combined.  Batter can be held in the
refrigerator, covered for 2 days.
In a skillet, heat 1/2 inch of oil over medium heat.  Check the oil to see if the batter
sizzles, when a small drop is put in. 
Add rounded tablespoons of batter to the oil.  Do not crowd.  Fry, turning once, until
each side is golden brown.  Put fritters on a warm platter and drizzle with honey to
serve.  They are best served immediately.
