BREAKFAST EGG SALAD SANDWICH

6 chopped hard-cooked eggs
2 tablespoons mayonnaise
1 tablespoon prepared mustard
1/3 cup pickle relish
2 tablespoon chopped parsley
1 teaspoon salt
1/4 teaspoon black pepper
2 eggs, beaten
1/2 cup milk
12 slices bread
Butter for grilling

In a bowl combine chopped eggs, mayonnaise, mustard, pickle relish,
parsley;
salt and pepper. Mix well. Spread the mixture on 6 slices of bread.
Top with
remaining slices. Blend beaten egg with milk in a shallow bowl. Dip
each sandwich in mixture. Cook on a hot buttered griddle until brown
on
one side. Turn; brown on other side. Serve piping hot. Makes 6
breakfast sandwiches.
