Cold Black-Eyed Peas & Corn

1 15oz can black-eyed peas, drained
1 15oz can corn, drained
1 4oz jar diced pimentos, drained
2 cloves garlic, minced
1-2 T. bottled Italian dressing
1/4 tsp. dried cilantro

Mix all ingredients and stir gently. Serve immediately or refrigerate
for up to a week
