BAKED CLAM OMELET
1 cup cooked clams, finely chopped
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon paprika
6 eggs, separated
2/3 cup cream
In a frying pan, sauté clams in butter for a few minutes. In a bowl,
beat eggs yolks until light; add salt and paprika. Add cream and clams
and mix thoroughly. Beat egg whites until stiff and fold into mixture.
Pour mixture into buttered omelet pan ;or skillet and bake in a
preheated 350 degree oven about
25 minutes, or until golden. Serves four.
My husband really enjoys clams, and this is a recipe I created for him.
