4 zucchini's, sliced
1 onion, finely chopped
1/2 c. grated carrot
6 tbsp. margarine
1 package Stove Top
1 10-oz. can Cream of Mushroom Soup
1/2 c. sour cream
Boil zucchini's. Sauté onion and carrots in margarine till tender.
In separate bowl combine stuffing mix with seasoning mix. Measure out
1 1/2 c. and reserve the rest for topping.
Combine onion and carrot mix with soup, sour cream and stuffing mix.
Gently stir in zucchini. Put in a casserole dish and sprinkle remaining
stuffing mix on top. Bake at 350 for 30-35 min. Enjoy!
