Turkey and Rice Quiche
3 cups cold cooked rice
2 cups cold chopped cooked turkey
2 medium tomatoes, finely diced
1/4 cup sliced scallions
1/2 cup diced green pepper
1 tablespoon chopped fresh basil
salt and pepper
red pepper to taste
1/2 cup milk
1 cup shredded cheddar cheese
1. Combine all of the ingredients except for the cheese in a large
flat greased casserole.
2. Top with the cheddar cheese.
3. Bake for 20 minutes at 375 degrees.
4. Serve hot.
