Tropical Fruit Dessert Soup

1 package tropical fruit bits
1/2 cup golden raisins
2 cans ( 11.5 ounces each ) mango nectar
1 banana, sliced
1 mango, diced
1 can ( 16 ounces ) pineapple chunks in juice, undrained
1 box ( 3 ounces) orange-flavored gelatin
1 cup boiling water
1 tsp. rum extract
1/4 cup minced crystallized ginger
garnish- toasted coconut and mint sprigs

In a 2 quart pot combine the fruit bits, raisins and nectar. Simmer
covered for 15 minutes. Add the banana, mango, pineapple chunks and
juice. Dissolve the gelatin in the boiling water and stir into the
mixture along with the extract and ginger. Cover and chill overnight.
Serve with garnishes. Serves 8

A wonderful summer dessert. Easy and can be made ahead. Nice served
with cookies.
