                                                                   Tomato Sandwich Italiano

Can be served as an open-faced sandwich or an appetizer.

4 slices Italian bread or French bread
1 large clove garlic, peeled and halved lengthwise
2 tablespoons Butter, softened
6  slices mozzarella cheese
1 large tomato, sliced
2 tablespoons pesto sauce
2 tablespoons grated Parmesan cheese (fresh is best)

Preheat broiler.  Arrange bread slices on a baking sheet and place in oven 4
to 5 inches from heat. Broil on both sides until lightly toasted.   Remove
from oven and rub cut surface of garlic over one side of each bread slice;
lightly butter same side. Arrange mozzarella cheese over toast and return to
broiler until cheese just begins to melt. Top with tomato slices and spread
with pesto. Sprinkle with Parmesan cheese and season to taste with salt and
pepper.   Place under broiler until hot and bubbly. Serve immediately.
