This was sent in by Eileen from Florida responding to my plea for some
good meatloaf recipes since my family has declared my meatloaf inedible.

Surprise Meatloaf

1 Tablespoon vegetable oil
1 3/4 Cups hash browns -- frozen, 8 oz,
-- partially thaw
1/4 Cup green pepper -- finely chopped
3/4 Cup cheddar cheese -- shredded
1 Envelope Lipton Onion Mushroom Soup mix
1/2 Cup water
1 1/2 Pounds ground beef
3/4 Cup fresh bread crumbs
1 egg
1/4 Cup ketchup
Onion Mushroom Cheese gravy

Preheat oven to 350*. In medium skillet, heat oil and cook potatoes
green peppers covered 7 minutes. Cool slightly, stir in cheese. In
bowl, combine soup mix with water; add remaining ingredients, mixing
thoroughly. In shallow baking pan, shape 1/3 beef mixture into a
(about 8X4) top with potato mixture. Cover with remaining beef
shaping into loaf and sealing edges tightly; bake 1 hour or until done.

Onion Mushroom Cheese Gravy

1 Envelope Onion Mushroom soup mix -- Lipton
2 Tablespoons all-purpose flour
1 3/4 Cups water
1/2 Cup cheddar cheese -- shredded

In a medium saucepan, combine 1 envelope soup mix with flour. Stir in
water; blend until smooth. Bring to a boil; then reduce heat and stir
cheddar cheese. Simmer, stirring frequently, until gravy thickens,
about 5
minutes. Makes about 2 cups gravy.

Serve with Surprise Meatloaf
