SPECIAL MEAT LOAF
12 ounces ground pork
12 ounces ground beef
1cup finely crushed corn chips
1 cup thinly sliced green onions
1 cup bottled chili sauce
1 tablespoon chili powder
1 1/2 teaspoon salt
1 teaspoon ground pepper
Combine pork, beef, corn chips, green onions, 1/2 cup chili sauce, eggs, chili
powder, salt and pepper in medium bowl. Mix to blend well.
Pack mixture into a loaf pan. Turn upside down on an ovenproof cookie
with a lip (for fat). Spread remaining
chili sauce over meat loaf.
(Can be prepared 2 hours ahead. Cover, refrigerate.)
Preheat oven to 450°F. Bake meat loaf uncovered until juices run clear
when centers are pierced with small sharp knife, about 40 minutes.
