Southern-Style Bean Bake
8 ounces sliced mushrooms
1/2 cup chopped onion
3 slices bacon, cut crosswise into 1/2-inch pieces
2 (16 ounces each) cans red beans, undrained
1/2 cup barbecue sauce
1/2 teaspoon Cajun seasoning
1 (7 1/2 ounce) package corn muffin mix1 egg
1/3 cup milk
1/2 cup shredded cheddar cheese
In medium skillet, cook mushrooms, onion and bacon over medium-high
heat until onions are transparent; stirring occasionally.
In medium bowl, mix together bacon mixture, beans, barbecue sauce
and Cajun seasoning. Pour into 2 1/2 to 3 quart casserole. Preheat
oven to 350 degrees.
In medium bowl, stir together corn muffin mix, egg and milk. Drop
batter by spoonfuls around edges of casserole. Bake at 350 degrees
until muffin ring is lightly browned around edges, 20 to 30 minutes.
Sprinkle with cheese and let stand 10 minutes. Serves 4 to 6.
