Sausage & Spinach Soup
1/2 lb. sweet Italian sausage, cut into 3/4" pieces
1 box (32 oz.) chicken broth
1 medium onion, chopped
1 medium carrot, sliced
1/2 tsp. dried oregano leaves, crushed
2 cups coarsely chopped fresh spinach
SPRAY saucepot with vegetable cooking spray. Add sausage and
cook until browned.
ADD broth, onion, carrot and oregano. Heat to a boil. Cover
and cook over low heat 10 min. or until vegetables are tender.
STIR in spinach and cook 1 min.
