PASTA SNACKS
Makes about 6 cups

8-oz. bite-size pasta (little bows, corkscrew macaroni, etc.)
Cooking oil for deep-fat frying
1 cup unsalted peanuts
2 tablespoons melted margarine
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning mix
Dash garlic powder, or to taste
1/4 teaspoon salt or to taste

1. Cook pasta according to package directions; drain well. Rinse with cold
water; drain again very well.
2. Heat 2 1/2-inches oil in a deep saucepan or deep-fat fryer, to a
temperature of 360 degrees. Fry cooked pasta, about a third a cup at a time,
for 1 1/2 minutes, or until golden brown, stirring often. Remove with a
slotted spoon and drain on paper towels. Repeat until all the pasta is
fried.
3. Place fried pasta in a bowl and stir in add nuts. Pour melted margarine
over mixture and toss to coat. Combine Parmesan, Italian seasoning and
garlic powder; sprinkle over mixture and toss. Cool mixture. Store in an
airtight container.

Note: The family will love this snack--and unless you tell them, they won't
know the main ingredient is pasta.
