ORANGE CARROT GELATIN

This is a recipe that my family has used for years, It
began as the basic orange carrot Jell-O recipe, and
over the years, it has gained a few more ingredients.
It is great at Potlucks and a refreshing, healthy
dessert in the summer.

1 large package of Orange gelatin
2 cups hot water or Cranberry juice
15 oz. cubed pineapple
1 can mandarin oranges
1-1/1/2 C. thinly shredded carrots
1/2 C. bing cherries without stem or pit (maraschino
cherries may also be used)

Mix the Jell-O with 2 cups of liquid and stir until
dissolved. Place in an 8"x8" pan or favorite mold in
the refrigerator for 30 minutes, just until the
gelatin begins to thicken. Add the pineapple,
mandarin oranges, carrots and cherries, gently stir to
incorporate. Continue to refrigerate until firm,
approximately 2 hours. Garnish with whipped cream and
fruit.
