Mashed Maple Sweet Potatoes
1 lb. red-skinned sweet potatoes,
peeled and cut into 1-inch pieces
3/4 lb. russet potatoes, peeled and cut into 1-inch pieces
3/4 cup whipping cream
2 tbsp. butter
2 tbsp. pure maple syrup
Cook sweet potatoes and russet potatoes in large pot of boiling water
until tender, about 12 minutes. Drain potatoes and return to pot.
Add cream, butter and maple syrup and mash until smooth. Season
with salt and pepper.
