 Lentil Tacos 
Yield: 6 Cups of Taco Filling 
 
2 Cups of cooked, drained Lentils 
2 Tbsp of Olive or Canola Oil 
1/2 C of Onions, chopped small 
1/2 C of Celery, chopped small 
1 Garlic Clove, minced 
1pound of canned chopped Tomatoes 
1 7 oz can of Salsa Verde 
1 package Taco Seasoning 
 
In heavy pan, sauté onion, celery and garlic with oil till tender,  
but don't let them brown-Add tomatoes, salsa verde, lentils and  
Taco Seasoning, simmer until heated through 
 
Serve with Hard or Soft Taco Shells and your choice of fillings  
(lettuce, cheese, sour-cream, etc.)
