 French Bean Sauté 
 
1 pound whole trimmed French green beans 
1 ear white sweet corn, cut into thin rounds 
2 tablespoons olive oil 
1 large red bell pepper, diced 
1 half cup peanuts 
2 medium tomatoes, diced 
1 half cup fresh cilantro leaves, chopped 
 
Cook beans and corn in a large pot of boiling water for three  
minutes. Drain and transfer to a bowl of iced water; drain. 
 
Heat olive oil in a large skillet over medium heat. Add bell pepper  
and peanuts. Sauté for 1 minute. Stir in beans and corn; sauté for  
1 minute. 
 
Turn off heat. Add tomatoes and cilantro. Toss to combine.
