Egg Casserole

12 eggs -- beaten
3 cups milk
1/2 cup onion -- chopped
1/4 cup margarine -- melted
8 slices bread -- cubed
grated cheddar cheese
1 can mushroom pieces
bacon or sausage or ham -- cooked, cubed

Mix eggs, milk and onion together. Grease a 9 x 13 pan. Melt butter
in pan and add bread cubes. Pour egg mixture over cubes. Add mushroom
and meat if desired. Cover with cheese. Chill overnight. Bake at 325
for 1 hour, 15 minutes or until done.

Food Exchanges: 1/2 Grain(Starch); 1 Lean Meat; 0 Vegetable; 0 Fruit; 1
1/2 Fat; 0 Other Carbohydrates

NOTES : Add whatever you wish to this recipe...mushrooms, peppers,
onions, etc. It is not necessary to refrigerate overnight, but its nice
to have something you can just pop in the oven in the morning with no
fuss.
