Corn and Black Bean Salsa

8 ounces frozen corn
1 15-ounce can black beans, rinsed & drained
1 cup diced tomatoes
1/4 cup diced red onion
1/4 cup chopped cilantro
1/4 tsp ground cumin
1 lime
1 jalapeno, finely diced (optional)
Salt and pepper

Thaw corn under hot water 3 minutes, drain. Mix with beans,
tomatoes, onion and cilantro. To corn mixture add cumin, juice
from the lime and jalapeno. Mix well and adjust taste with salt
and pepper. Serve chilled or at room temperature.

Serve with chips or as a side dish with grilled pork or fish.
