Coconut Toffee Cookies

1 cup sugar
1 cup firmly packed brown sugar
1 cup butter, softened
3 eggs
1 tsp. almond extract
1 tsp. vanilla
3 cups all-purpose flour
1 tsp. baking soda
1-3/4 cup coconut, toasted
1 pkg. (10 oz.) English toffee bits
Heat oven to 350 F.
Combine sugar, brown sugar and butter in large bowl. Beat at medium
speed, scraping bowl often, until creamy, 1 - 2 minutes. Add eggs, almond
extract and vanilla. Continue beating until well mixed, 1 - 2 more minutes.

Add flour and baking soda. Reduce speed to low, beat until well mixed, 1 to
2 minutes.
By hand stir in coconut and toffee bits. Drop by rounded tbsp. 2" apart
on ungreased cookie sheet. Bake 8 - 11 minutes, or until edge are golden
brown. Let stand 1 minute, remove from cookie sheet and cool completely.
Makes 5 dozen.
