1 pkg. lasagna noodles
1 T. olive oil
2 lbs. hamburger
1 1/2 lbs. cottage cheese
1 1/2 lbs. ricotta cheese
1/2 lb. mozzarella cheese, shredded
1/2 lb. Colby jack cheese, shredded
1/2 lb. pepperoni
1/2 lb. Capicole (Italian spicy) ham
1 c. parmesan cheese
2 qts. tomato sauce
1 green pepper, diced
1 red pepper, diced
1/2 lb. carrots, diced
2 c. sliced mushrooms
2 Tbsp. California garlic
1 t. black pepper
1 t. salt
1 t. Italian seasoning
Combine sauce ingredients and simmer for one hour. Preheat oven to 350.
Prepare lasagna noodles by boiling 6 qts. water. Add noodles; return
boil for 12 minutes. Drain and add olive oil. Allow to cool.
Brown ground beef and drain. In a large mixing bowl, combine cottage
cheese, ricotta cheese, parmesan cheese, eggs, and ground beef. Mix
well. Add sauce to the cheese and beef mixture. Stir. In a 9 x 13
pan, cover bottom of pan with sauce. Add a layer of lasagna noodles.
Top with sauce, a layer of pepperoni and a layer of ham. Sprinkle with
mozzarella and Colby jack cheeses. Continue layering, and end with a
layer of sauce. Bake for 1 hour. Remove and sprinkle a final layer of
mozzarella/Colby jack cheese. Return to oven and bake for an additional
10 minutes. Remove and allow to sit for 5 minutes before serving.
