Cilantro Pepita Salad Dressing

4 oz. Anaheim Chile
1 1/2 oz. pepitas
1 oz. fresh garlic
1/2 tsp. pepper
1/4 tsp. salt
1/2 qt. salad oil
1 3/4 oz. grated cotija cheese
6 oz. trimmed cilantro
1/2 lb. mayonnaise
2 oz. water

Roast chiles until brown and skin bubbles, then peel. Lightly roast pepitas. Puree fresh garlic in blender. Add all ingredients into blender except cilantro, mayonnaise, and water, and blend approximately 10 seconds. Add cilantro little by little until blended smooth. Place mayonnaise and water in a bowl and mix with a whisk until smooth. Add the  blended ingredients. Mix until ingredients are thoroughly combined. Place in a container and refrigerate.
