Carrot Mustard Dressing

4 tbsp. Good Quality Mustard
4 tbsp. carrot juice
2 tbsp. Sherry Wine Vinegar
4 tbsp. grapeseed oil

Whisk the first 3 ingredients together in a bowl.  Gradually
add oil in a stream, whisking constantly until emulsified.
Season to taste with salt and pepper.

MOM!MOM! notes:  The better quality ingredients, the better this
dressing turns out.  I have provided links to quality mustard and
vinegar.
