Broccoli Pasta on the Side
1/2 cup chopped onion
3/4 cup shredded carrot
2 TB olive oil
1 cup sliced fresh mushrooms
10-1/2 oz. can cream of chicken soup
3/4 cup water
1/4 tsp.. cayenne pepper
12 oz. pasta twists
1-1/2 cups fresh broccoli, chopped
grated parmesan or Romano cheese
In a 10-inch skillet with a cover, sauté onion and carrot in
olive oil over medium heat until just tender. Stir in mushrooms,
soup, water, cayenne. Bring to boil and add (uncooked) pasta twists.
Return to boil. Reduce heat, cover and simmer 10 mins.
Stir in broccoli and cook another 8 minutes or until it and the pasta
are tender, stirring occasionally. Sprinkle with cheese.
Good with broiled or baked chicken. Makes 8 servings.
