Broccoli Cheese Soup
2 cups fresh broccoli
1 can beer any brand
2 cups non-fat sour cream
4 ozs. crumbled bleu cheese
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
Combine broccoli and beer in sauce pan and
simmer until tender about 15 minutes.
Put in blender and puree. Stop blender
and add remaining ingredients and
blend again until all combined. Put back into
sauce pan and reheat until simmering.
Place in bowls and serve with good artisan
bread or garlic bread. Serves 4-6
People won't recognize the beer smell
or flavor. As it cooks it
intensifies into a rich nutty flavor and aroma.
People comment on it favorably but they can't
identify it. People who don't like broccoli will
like this recipe.
