BROCCOLI AND GARLIC SALAD
4 servings

1 large bunch broccoli
1/3 cup mayonnaise
1 tablespoon white wine vinegar
1/2 teaspoon dry mustard
Pinch cayenne pepper
2 teaspoons finely chopped garlic
1/2 teaspoon salt
1/4 teaspoon pepper
Grated zest of 1/2 lemon

Remove heavy stems from broccoli flowers and peel. Cut stems into 1/2
inch slices, Cut flowers into bite-size pieces. Bring a large pan of
salted water to a boil and add broccoli stems and flowers; cook 4
minutes until crisp-tender. Drain and cool in cold water. Drain
again and chill.

In a salad bowl, mix mayonnaise, vinegar, mustard, garlic, salt,
pepper, and lemon zest. Add chilled broccoli and fold together
gently, Chill until ready to serve.
