Baked Eggs

1 Tbsp. olive oil
1/2 tsp. sage, fresh chopped if possible,
1/8 tsp. dried thyme
1 Tbsp. (heaping) green onion tops, chopped
2 extra large eggs
1/8 cup grated sharp cheddar cheese
fresh ground pepper to taste

Put olive oil in a 7 x 4" ramekin and run it around the bottom and
sides. Put sage in bottom and add the thyme. Break eggs into ramekin
and sprinkle green onion over top. Top with cheddar.

Bake at 400 F. for 10 minutes. Remove and grind a bit of pepper
over top. Yield: 1 serving.
Can make as many as you like recipe can be doubled, quadrupled, etc.
