Cheesy Hot Tamale Turkey Casserole



2 lb. ground turkey
2 pkgs. taco seasoning
2 (8 1/2 oz.) boxes Jiffy corn muffin mix (or other brand)
2 eggs
1 c. milk
2 c. shredded Monterey Jack cheese
1 c. salsa (hot or mild)

Brown ground turkey and drain off fat, add both taco seasoning as
directed on packages. Prepare 1 box of corn muffin mix with 1 egg ,
1/2 cup milk and stir well. Pour into a greased 13x9 inch baking pan,
spread evenly. Sprinkle ground turkey on top of corn bread mixture.
Layer with 1 cup of cheese. Prepare second box of corn muffin mix with
1 egg and remaining milk, stir. Pour on top of cheese and spread evenly.
Bake at 350 degrees for 30 minutes.
Remove from oven, spread salsa on top and sprinkle with remaining
cheese over salsa. Return to oven and bake for 10 more minutes.
Remove and cool for 15 minutes.
Serves 4-6
