Tuna Salad in Green Pepper Cups

5 medium green peppers
1 cup shredded carrots
1 cup sliced celery
2 tbsp. onion, chopped
1 6 or 7oz can tuna, drained
1/2 cup mayonnaise
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. yellow mustard
salt to taste

Cut peppers in half lengthwise.  Remove seeds and membrane.
Precook in boiling water 5 minutes.  Drain and chill.  Combine
carrot, celery, onion and tuna.  Mix remaining ingredients for
dressing and pour over tuna mixture and toss.  Chill.  Serve tuna
salad in pepper halves.
