Sweet Potato Balls

2 c mashed sweet potatoes
1 t salt
1 1/2 T butter
1 T sugar
6 marshmallows
1 1/2 c crushed corn flakes
1 egg white

Cook sweet potatoes until soft, then mash very fine. Season
potatoes with salt & sugar then the melted butter. Shape around a
marshmallow. Chill in refrigerator 30 minutes. Dip balls in
slightly beaten egg white & roll in corn flakes. Place in fat
greased baking dish & bake at 400 degrees for 20 minutes or until
golden brown.
