Smoky Beef Chowder

1 stalk celery, finely chopped
1 medium onion, finely chopped
2 tbsp. butter or margarine
3 tbsp. flour
salt to taste
1/4 tsp. dried basil
1 3 oz. package thinly sliced smoked beef, chopped up
3 cups milk
3/4 cup shredded American cheese
1 tbsp. chopped parsley

In a medium saucepan, cook chopped celery and onion in butter until the
onion is  tender. Blend in flour, salt and basil.  Stir in smoked beef. 
Add milk all at once.   Cook, stirring, until thick and bubbly.  Stir in the
shredded cheese until melted. Stir in parsley and heat through.
Makes about 4 servings.
