A delicious, different and succulent pasta recipe I created that
everyone really enjoys!

1 lb. smoked sausage, cut in 1/2-inch slices
3 tablespoons olive oil
1/2 onion, thinly sliced
2 cloves garlic, minced
1 eggplant, about 1 lb., quartered and thinly sliced
1 medium green pepper, sliced in thin strips
2 cans 14.5-oz. diced tomatoes
1 can 8-oz. tomato sauce
1 teaspoon oregano
1 teaspoon basil
1 teaspoon salt
1 teaspoon crushed red pepper flakes, optional
1 lb. Linguini pasta, cooked
3 tablespoon minced fresh parsley

In a large skillet sauté sausage slices in olive oil for 5 minutes; add
onion and garlic and cook another few minutes. Add eggplant, green
pepper, tomatoes, tomato sauce oregano, basil, salt and crushed red
pepper. Mix thoroughly, bring to a boil, lower flame, cover and cook
for 30 minutes. In a large serving bowl, place hot cooked linguini and
spoon sauce over top. Sprinkle with minced parsley. Enjoy!
